Stuffed Acorn Squash
Two lonely acorn squash have been sitting in my fridge since well before Christmas. I have been doing a pretty good job at ignoring their existence until today when I opened the fridge and one rolled out and landed on my foot. It was pretty much begging to get eaten, so I threw it in the oven. Since it was the perfect size and shape for stuffing, I decided that would be the fate of this squash;...

Healthy Vegetarian Spaghetti Squash Pad Thai
THIS IS OFFICIALLY THE HEALTHIEST PAD THAI RECIPE EVER!!!! Not only does replacing the traditional rice noodles with spaghetti squash and shredded cabbage omit all those unnecessary carbs, but it adds virtually all the vitamins and minerals, not to mention a good dose of dietary fiber. This seriously tastes just like pad thai! Especially since spaghetti squash has a similar texture to rice...

Solestruck's New Vintage Lookbook: NIGHT RIDER
I’ll say it once, I’ll say it again, I’ll say it a thousand times…I’m kind of a vintage freak. Searching the thrift stores for cool vintage pieces is like treasure hunting. But if you don’t feel like being a pirate, Solestruck has all your vintage treasures in one place! This lookbook is a combination of Shoes from Solestruck’s Department of Antiquities...

Vegan Peanut Butter Chocolate Cream Pie
This pie is pure unadulterated bliss! I served it on Christmas Eve to a table full of very skeptical non-vegans. I’m pretty sure it blew their minds. My favorite part about this pie is the Nutter Butter crust, if possible, don’t substitute with another crust type! If you live some place where Nutter Butters aren’t available…then I guess graham cracker crust will work...

Styling Sequins for NYE
Glam Rock Groupie by luxhippie featuring solestruck
I made this inspiration board for a contest that Solestruck is having for the best New Years Eve outfit.
When it comes to styling sequins on New Years Eve, it’s kinda tricky. How do you stand out in a crowd full of sequined beauties?? Better yet, how do you keep yourself from looking like a Vegas show girl?
Be original and don’t...

My Cameo on Solestruck!
It’s wonderful when you get to model for a company/store that you truly love. Solestruck is my absolute favorite shoe store in the world! The people that work there are fabulous, they know their shit, they are obsessed with shoes like me; they are seriously awesome. :)
The amount of awe-inspiring shoes that Solestruck carries is almost disgusting, and it seems like every day they get even...

Vegan Coconut Cashew Bon Bons
One of my favorite homemade Christmas candies are my grandma’s coconut bon bons. These are a lower calorie and vegan version. I like them even better! (sorry grandma!)
Although these are my favorite Christmas candy, it doesn’t have to be Christmas to make these amazing little balls of joy! I like to keep them in the freezer and sneak one out every now and then for a special treat. ;-)

Raw Vegan Banana Coconut Cashew Cream Pie
I made this pie for Thanksgiving, and ended up eating the whole thing myself! It’s gluten-free, vegan, requires no baking and is very quick and easy to make. What could be better?! Just don’t eat the whole thing like I did. Sorry for the poor picture quality, my camera broke and all I had was my iphone camera :-/
p.s. If you don’t like bananas, this pie would also be good...

3 tablespoons + 1 ¾ cups water ½ red onion, chopped

Heartwarming Red Cabbage Salad
This salad was inspired by a recipe from the blog 101cookbooks. The original recipe called for feta and parmesan cheese, which I omitted, and added superfirm tofu to make it vegan and I tweaked a few other ingredients. It turned out really good! Even better the next day.
Ingredients:
1/2 cup sunflower seeds 1 teaspoon natural cane sugar (or brown sugar) salt to taste
2 tablespoons...

Autumn Harvest Muesli
I pretty much eat muesli every single morning. There’s so many ways to make it, combining different fruits. Until now, I never thought to add shredded carrot to my muesli. I came across this genius idea from the blog: Vegan on the Go-Go. Her carrot cake oats inspired this recipe. You can try this recipe with normal soy milk (or whatever type of milk you prefer), or if you want to spend a little...

Halloween Weekend
I don’t know about you guys, but for me, Halloween has typically been a week-long celebration. I tend to really get into my costumes, and this year was no exception.
This year, the festivities started on Thursday night, but ironically, on Monday, the actual day of Halloween, I ignored the holiday completely. There’s something depressing about Halloween falling on a Monday night. I...

Creamy Green Bean and Tomato Salad
This recipe was adapted from a recipe I found on the blog 101cookbooks. The original recipe was not vegan, and I also tweaked the ingredients a little bit, using ingredients I had available from my grandma’s garden. My favorite thing in this recipe is the little yellow cherry tomatoes. They are sweeter than red cherry tomatoes, I eat them like candy.
Ingredients: ½ cup plain soy yogurt...

Creamy Low Fat Pumpkin Hummus
Last week I sampled a pumpkin hummus at New Seasons grocery store…I totally spaced it and forgot to get the recipe card, but I figured it wouldn’t be hard to come up with my own recipe. It turned out amazing. This is probably my new favorite hummus. I would have never thought to use pumpkin in hummus before this. The pumpkin makes it a lot creamier, and I didn’t have to used a...

Bunless Baja Veggie 'Chicken' Burger
I came up with this recipe while making my veggie Chicken sausage. The texture is such that they are better without the bun, which is great in my opinion. Who needs all those carbs anyway?! The recipe makes 6 burgers, you can wrap them in foil and freeze them for later, then pop them in the microwave and heat for a minute or so. Cooking the burgers ahead of time makes this recipe quick and easy....

Street Style: Backstage Portland Fashion Week
My favorite part about fashion week? The street style…..
Here’s Anna, one of Portland’s most amazing fashionistas. I’m always so excited to see what Anna is wearing. I basically attacked her with my camera every time I saw her, grilling her on the details of what she was wearing…which was mostly vintage finds….A-mazing.

I Love PureFit Vegan Nutrition Bars!

Day of the Dead Cupcakes!
These are the cupcakes I made for my friend’s birthday last weekend using my recipe: Super Moist and Decadent Chocolate Vegenaise Cake with Ricemellow Cream ‘Cheese’ Frosting

1 cup veggie broth
1 tablespoon soy sauce
½ teaspoon liquid smoke
½ cup TVP
Optional: you do not need to add the above ingredients to the recipe, the sausages turn out fine without them, the TVP just gives them a meatier texture. If you choose not to add the TVP, omit the ingredients above and start at step two in the directions.
2 cups garbanzos beans, made into a smooth paste (I do...

I'm in Love...with Thailand
I just got home from my backpacking trip in Thailand, and I’m missing it already. Whenever I visit a new place, even if I love it, I usually don’t make plans on going back any time soon because I’d rather explore some new places that I’ve never seen before. Thailand is one of the few exceptions. I want to go back…right NOW. The food, the people, the culture,...

The Lowest Calorie Eggplant Hummus
Ten years ago, most people didn’t even know was hummus was. Now It’s pretty much a staple item in everyone’s refrigerators. Rumor has it that McDonalds might even start selling hummus (God, probably the most unhealthy, genetically modified hummus they can come up with). Hummus is healthy, but it definitely isn’t low calorie. Most store-bought brands contain anywhere from 60-80 calories per...

Never in a million years did I ever think I would blog about mayonnaise (so not sexy), but it tastes AMAZING and has half the calories of the original Vegenaise. It’s seriously so good I could eat it by the spoonful (ok not really, but still). Even if you aren’t vegan, you should...

Simply Delicious Warm Kale Salad
This is one of my fast and easy go-to recipes. I can run home in between classes and make is for lunch with no time-crunch. It’s a salad that doesn’t feel like you’re eating a “salad”. It’s also the type of salad that you can make for lunch the night before. Since kale is so rugged, it holds up overnight and doesn’t get soggy like most greens would. Just...

Sunrise Morning Muesli
I never eat cereal. Don’t get me wrong, cereal is delicious, but I find myself eating 3 bowls before I’m full, getting a carb and sugar overload, and then feeling like crap afterwards. I can’t even recall the last time I bought a box of cereal, but this morning, I was definitely craving some crunchy, milky goodness. Rather than eating your typical ‘cereal,’ I usually opt for muesli, a more...
