Bunless Baja Veggie 'Chicken' Burger
I came up with this recipe while making my veggie Chicken sausage. The texture is such that they are better without the bun, which is great in my opinion. Who needs all those carbs anyway?! The recipe makes 6 burgers, you can wrap them in foil and freeze them for later, then pop them in the microwave and heat for a minute or so. Chipotle Lime Ranch Dressing
Ingredients: 3 tablespoons vegenaise 1 tablespoon soy milk ¼ teapoon cumin 1 teaspoon adobo sauce from chipotle peppers ½ teaspoon onion powder ½ teaspoon garlic powder

This was the first time I have ever cooked with pattypan squash. They are the perfect shape for stuffing! I filled them with my version of ‘ground beef’ using TVP.
