Strawberry Rhubarb Cocktail
After visiting my grandma last weekend, she sent me home with a huge bag full of rhubarb, fresh from her garden. As much as I love strawberry rhubarb pie, I love cocktails even more! So instead of making a typical rhubarb pie, I opted to make this refreshing summer beverage. It’s sweet, tangy and delicious. I served this drink to a couple of my friends at a little get-together I had this...

Swiss Chard Wrapped Pesto Eggplant with Polenta...
This recipe was inspired by a dish I had at Portabello Vegan Trattoria, my absolute favorite restaurant. In the vegan mecca that is Portland, this is one of the most upscale and delicious vegan restaurants of them all. You have to make reservations about a week in advance, unless you want to wait about 2 hours for a table. Their menu is ever-changing, based on what is locally in season. This...

Street Style: A Day in Montmartre
On what seems like the hottest day that Paris has even seen, we decided to go on a day-long hike in the streets on Montartre, it’s my absolute favorite neighborhood of Paris. My good friend Kerry, who owns O’Pearl Art, gave me these awesome Chinese earrings, they definitely pull together the whole look.

Street Style: Standing out in the Tourist Crowd
I didn’t want to get lost in the crowds of Paris, so I wore the brightest outfit I could find ;-). This vintage skirt cost me 5 dollars, its the perfect light fabric for a hot summer day.

Spicy Creole Cauliflower Salad
This recipe is about as close as I have ever gotten to venturing into the realm of Cajun Cuisine. With barley, black-eyed peas and cauliflower, it’s a complete protein meal with enough fiber to use a whole roll of toilet paper.
Ingredients:
1 large head cauliflower, chopped in bite-sized pieces ½ large red onion, thinly sliced 1 large bell pepper, chopped (any color, I used a combination of...

Its all about Cat Eyes
I found this cat-eye and whisker T-shirt at a vintage shop a few years ago. It was oversized, so I cropped it and cut the crew neck out of it. Not sure what drew me to this shirt…maybe its my obsession with cat-eye sunglasses…I don’t wear any other kind.

The Best Vegan Stroganoff Ever.
This stroganoff is so good that when I first tried it, I almost had a seizure. Warning: If you make this, you might end up eating all three servings in one sitting. Don’t be a fat-ass like I was and do try to restrain yourself… ;-) Ingredients: 4 cups uncooked brown rice fusilli pasta (used Trader Joe’s Brand) 1 tablespoon vegan butter (I used earth balance) 4-6 oz seitan, chopped...

The "Where Do You Get Your Protein?" Salad
Where do vegans get their protein????
Since I get asked this question all the freaking time, I decided to make a salad which proves that yes, vegans can get enough protein. This salad has 35 grams of protein per serving, that’s about 70% of the daily recommended amount (for my weight/height). Not to mention it has about 70% of your daily fiber requirements. It’s simple, tasty and good for you.

Beyond Amazing White Bean Vegan Quesadillas
I made these amazing little things a few weeks ago when a non-vegan friend of mine came to visit. I had only 15 minutes to throw something together, so I wanted something that was not only quick to make, but also something that would blow their mind since they hadn’t intentionally eaten vegan before. I accomplished both and still had time to make my spicy margarita.
Note: Although I used...

Vegan Tuscan White Bean Stew
This soup is really fast and easy, good for a quick week-night meal. I made this because I’m studying for finals, don’t have much time to cook, and it makes a lot of left-overs. On the second day, I added some whole wheat penne to what was left and it was A-mazing.
Try this delicious soup with my Italian White Bean Crostini appetizers, my Fast and Easy Vegan Alfredo or this delicious...
