The -What to do with Celery- Salad

Ever find yourself buying a bunch of celery at the store, using one stalk, and not knowing what the heck do to with the rest? Celery is always the poor lonely bastard in my fridge that ends up getting limp before I can eat it all (yeah, that’s what she said).

I came up with this recipe last night when I was faced with this dilemma. Celery definitely isn’t my favorite veggie by a long shot. This is the first time I’ve made celery the main ingredient of a recipe. I typically prefer it as an accent to recipes like my Tempeh Salad Sandwich. If you are looking for a way to get rid of some celery, try this!

Ingredients:

Salad:

1-2 bunches of celery, about 6-10 stalks (really, however much you have and need to get rid of)

4 green onions

1 crisp apple cut in bite size pieces (I used Fuji)

1 ripe pear cut in bit size pieces

4 oz super firm tofu

1/3 cup raisins

½ cup walnuts

Dressing

1.5 tablespoons curry

1 teaspoon cumin

1 teaspoon garlic powder

1.5 teaspoon vegan mayo

Juice from ½ lemon

1.5 teaspoons salt (may need to add more to taste)

Directions:

Salad: In a large bowl combine celery, green onion, apple, pear, tofu, raisins and walnuts.

Dressing: In a separate bowl, whisk together curry, cumin, garlic powder, mayo, lemon juice and salt.

Add dressing to salad and toss together until salad is well coated. Enjoy immediately.

Serves 4
