Strawberry Rhubarb Cocktail

After visiting my grandma last weekend, she sent me home with a huge bag full of rhubarb, fresh from her garden. As much as I love strawberry rhubarb pie, I love cocktails even more! So instead of making a typical rhubarb pie, I opted to make this refreshing summer beverage. It’s sweet, tangy and delicious. I served this drink to a couple of my friends at a little get-together I had this weekend. They both loved it! You can even make this non-alcholic for the kiddies, just leave the vodka out.
Ingredients:
3 large stalks rhubarb, sliced (about 7 ounces)
1 cup sugar
1 tablespoon lemon juice
1 cup water
6 large, fresh strawberries
4 tablespoons lime juice
1.5-2 oz vodka (per drink)
1 liter club soda
Directions:
1. In a small sauce pan, add rhubarb, sugar, lemon juice and water and bring to a boil. Boil for about 10 minutes. The rhubarb will fall apart and turn into a pulp.
2. Strain the liquid from the pulp using a colander and discard the pulp.
3. In a food processor, add the rhubarb liquid, strawberries and lime juice and blend thoroughly; for about 1 minute.
4. Place the strawberry rhubarb liquid in the fridge until cooled.
5. Fill a large glass half-full with ice, add 1/5th of the chilled strawberry rhubarb juice, 1.5-2 ounces of vodka and fill to the top with club soda. Stir well until all ingredients are mixed. You can also add a touch more lime juice.
